I call this &#8220;eggs and things&#8221;.  It&#8217;s sort of like a reverse frittata.  The actual vegetables used don&#8217;t matter too much, as long as they&#8217;re fresh and in-season.  Made with potatoes and onion, this becomes la tortilla de españa.
